Frittata Muffins

Fritatta Muffin

These frittata muffins are a great savoury morning tea or lunch. They are easy to modify using whichever ingredients you like. Simply keep the ratios of eggs and cream the same and you will have a tasty frittata 🙂 Next time I might get a better picture haha


  • 6 eggs
  • 1/4 cup cream
  • black pepper
  • 75g bacon diced
  • 1 onion diced
  • 100g red capsicum
  • 60g cheese


  • Preheat oven to 180 degC fan
  • Fry off onion and bacon in a frying pan with a little olive oil
  • Chop red capsicum into roughly 1cm pieces
  • Whisk together eggs and cream in a mixing bowl, with a little black pepper to taste
  • Divide up the bacon, onion and red capsicum evenly between the muffin tins
  • Pour the egg mixture on top and then sprinkle some cheese over

  • Bake for 20-25 minutes until golden
  • Serve warm or cold as you please
