
These frittata muffins are a great savoury morning tea or lunch. They are easy to modify using whichever ingredients you like. Simply keep the ratios of eggs and cream the same and you will have a tasty frittata 🙂 Next time I might get a better picture haha
Ingredients
- 6 eggs
- 1/4 cup cream
- black pepper
- 75g bacon diced
- 1 onion diced
- 100g red capsicum
- 60g cheese
Method
- Preheat oven to 180 degC fan
- Fry off onion and bacon in a frying pan with a little olive oil
- Chop red capsicum into roughly 1cm pieces
- Whisk together eggs and cream in a mixing bowl, with a little black pepper to taste
- Divide up the bacon, onion and red capsicum evenly between the muffin tins
- Pour the egg mixture on top and then sprinkle some cheese over
- Bake for 20-25 minutes until golden
- Serve warm or cold as you please
